Bodega Chacra was founded in 2004 by Piero Incisa della Rocchetta, the Grandson of the creator of Sassicaia. What makes this particular Chardonnay so good was the fact that Piero consulted the famed white Burgundy producer, Jean-Marc Roulot to help him create the best quality Chardonnay possible. Coming from 40-year-old vines on mineral soils and fermented with indigenous yeasts in a mixture of mix of 75% French oak barrels from Roulot's domaine in Mersualt, and the rest in clay amphorae, and concrete eggs. 75% of the wine matured in barrel for nine months, while 25% of the volume was kept in concrete for that time. This is a subtle and elegant Chardonnay with an energetic saline sensation while also having a velvety mouthfeel.

Coming from one of the most distinguished wineries in Australia, the Penfolds RWT Shiraz, also know as Bin 798, is an incredible wine made from 100% Shiraz from the Barossa Valley. RWT is made from fruit primarily selected for its aromatic qualities and lush texture before being matured for 17 months in French oak hogsheads with 70% being new and 30% at 1-year old. The 2014 vintage in particular had very low yields and created a much more elegant RWT than the usual, while still having sophistication and structure. This wine will be drinking incredibly now and will continue to continue to mature for a good while longer.

The Sullivans Cove American Oak Single Cask HH00096 is an exceptionally rare and highly collectible batch in Sullivans Cove’s history. This specific batch number was bottled in December of 1999 and was bottled in February of 2014, the same year they won World’s Best Single Malt at the World Whiskies Awards. This is one of the original and historic casks from the original distillery and only 154 bottles of this specific batch was made, making this one of the rarest bottlings currently on the market.

Chateau Doisy Daene is a fantastic Second Growth estate that has existed back since the 1800’s. Made from a blend of Sauvignon Blanc and Sémillon and produced by the legendary Denis Dubourdieu, this is a vintage Sauternes that is drinking fantastically for a terrific price.

The 2010 Rieussec is a blend of 92% Semillon, 5% Sauvignon Blanc and 3% Muscadelle and is one of the crown jewels of Bordeaux’s sweet wine, sitting proudly alongside the top names of the region. Adjacent to Château d’Yquem, where gravelly clay soils over limestone provide superb drainage and reflect heat to the vines. Grapes are hand harvested in multiple passes to ensure only perfectly botrytised fruit is selected, then fermented and matured for around 18 to 24 months in French oak barrels. The 2010 vintage was fantastic for Chateau Rieussec, producing a Sauternes of extraordinary richness, balance and longevity.

The 2010 Château Climens, is an exceptional sweet wine from one of Barsac's most revered First Growth estates. Made entirely from Semillon and a standout of this commune, this Chateau is made even better thanks to the outstanding 2010 vintage. The grapes are only picked once they have been touched by botrytis cinerea, the noble rot that shrivels the fruit and concentrates what is left inside it. Fermentation and ageing then take place in barrel. This bottle showcases remarkable purity, precision and longevity.

Chateau Canon La Gaffeliere is an exceptional Premier Grand Cru Classe estate of Saint-Emilion (although at the time of this vintage was only classified as Grand Cru Classe), on the right bank of Bordeaux. The 2005 vintage, an iconic vintage for Bordeaux, is composed of 55% Merlot, 40% Cabernet Franc, and 5% Cabernet Franc. This bottle is drinking beautifully at this time and has developed exceptionally well thanks to the great vintage and exceptional winemaking.

Coming from the Serralunga d'Alba commune in Piedmont, the Aeroplaneservaj Barolo is the one of the prestigious Domenico Clerico’s most iconic wines. The 2017 vintage created a full bodied wine that offers rich concentration and power while also being elegant and refined. This is drinking well now but will continue to cellar well for another 20 years.

Hurley’s “Hommage” is a small single vineyard of only 2 acres in the Mornington Peninsula. This small but fantastic vineyard produces fantastic pinot using the G5VI5 and MV6 clones and is matured in French oak casks, one quarter being new, for 20 months before being bottled without fining or filtration. This produces a fantastic juicy Pinot Noir full of pure fruit flavours along with complex savoury notes.

The “Le Trio De Delemain” gift set comes from the Maison Delemain’s holdings of the most prestigious growths in Cognac, La Grande Champagne. This area is Cognacs only first growth region and is the heart of the region, producing the finest and most age worthy of Cognacs. This set contains 3 of 200ml bottles, consisting of Cognacs from 1960, 1963 and 1968.

Coming from the cool climate of Victoria’s Mornington Peninsula, the Paringa Estate Peninsula Pinot Noir (aka PE Pinot Noir) expresses the unique characteristics of Mornington Pinot Noir. Taken from multiple different sits and microclimates in the Peninsula, this wine reveals a vibrant and textural palate, with flavours of red cherry and space with a savoury finish and strong acidity

Coming from the cool climate of Victoria’s Mornington Peninsula, the Paringa Estate Peninsula Chardonnay is a zippy citrus driven wine with a taste of stone fruits and bright flinty note. The fruit is handpicked, whole bunch pressed and fermented with wild yeasts in barrel before maturing for 8 months.

The 2021 Triolet is defined by its fineness and delicacy.  It is one of the most clean and pure expressions of this unique blend.

The winemaking process involves separate fermentation, predominantly in older barrels, with careful pressing to enhance texture. Lees stirring adds complexity and body. After 11 months of barrel aging, the Triolet develops complex aromas as the fruity flavors fade.

Lallier Blanc de Noirs is a composition from two mythical Pinot Noir Grand Crus terroirs: Cultivated with 100% Pinot Noir grapes from Aÿ, the only Grand Cru of the Vallée de la Marne,offering a soft and fresh Pinot Noir, and the the hilly Verzenay region in Montagne de Reims, offering intense character. Perfectly timed harvesting ensures that the grapes used in Blanc de Noirs Champagne are fully matured and at their pinnacle.

The combination of maturation in stainless steel tanks (90%) with 228L wooden barrels (10%) adds to the blend complexity, while the long aging on lees and low dosage (7g/l) completes the Blanc de Noirs’s signature profile. A 100% Pinot Noir blend made with 70% of harvest of that year. The result is a powerful, refined and generous wine.

La Grande Année 2014 is an assembly of 19 crus, mostly in Aÿ and Verzenay for the 61% Pinot Noir and Chouilly and Oiry for the 39% Chardonnay.

Fermentation takes place entirely in oak barrels and the wine is aged, sealed with a natural cork, for more than twice the time required by the appellation. Dosage is moderate, 8 grams per litre.

Livio Felluga is a highly regarded winery coming from the Friuli-Venezia Giulia region of Northern Italy.

Their Pinot Grigio, known for its elegant minerality and tanginess and complex rich flavours, were hand-picked in small crates, to preserve the integrity of the fruit. After gentle destemming the fruit was left to macerate for a short period, then softly crushed, and the must obtained was clarified by decantation. Temperature-controlled fermentation followed in stainless steel vats. At the end of fermentation, the wine was kept on the lees for a few months to increase its complexity, creamy texture and suitability for ageing.
